I based this knife off of the japanese Gyuto, or three purpose knife. Bottom half of the blade is flat for light chopping and push cuts. The top half of the blade is curved to assist with rocking (seesaw) style cutting, and the tip is perfect for articulate use. Serial numbers G.0001-G.0030 have been forged from W2 steel, ALL BLADES WILL PATINA WITH USE, so be sure to hand wash and dry immediately after use!
Recently added (9/12/25) forged STAINLESS! From the Swedish company Uddeholm, AEB-l is a steel designed for razor blades. On top of corrosion resistance, it’s fine carbide structure allows for fine edges and a sharpenability almost on par with that of high carbon steels. The hardness is a tad lower than that of the W2 blades, so expect to hone the edge more frequently, but never because of loss of edge dude to corrosion. I keep the hammer marks from forging along the flats to give that rustic aesthetic, but with this steel, rust will be a mush reduced problem. I still recommend washing and drying by hand.
