Forged AEB-L Petty Knife – Kitchen Utility Series
This 4-inch petty knife is forged from AEB-L stainless steel and fitted with a figured hardwood handle and black ferrule.
While it shares the same profile as my compound-ground petty knives, this version represents a different approach to kitchen performance.
Ground entirely on an 8-inch contact wheel, these knives feature a continuous hollow grind and a slightly more robust edge geometry. The result is a compact kitchen utility knife that emphasizes versatility, durability, and confidence in everyday use.
The distinction is subtle, but meaningful.
Over time, I found that my compound-ground petty knives excelled at moving through food with exceptional ease. Rather than replacing that design, these knives return to the original concept that inspired the pattern: a nimble, all-purpose kitchen companion capable of handling everything from fruit and vegetables to trimming proteins and everyday prep work.
Forged texture is preserved along the spine of the blade, providing visual character while maintaining clean satin-finished bevels and a fine cutting edge.
