13” Hand-Forged W-2 Sujihiki / Slicer
A performance-driven sujihiki built from W-2 high carbon steel, forged and finished by hand. This piece is designed for long, clean slicing cuts with minimal resistance.
The blade has been fully heat treated and hardened for edge retention and responsiveness, while maintaining the toughness needed for controlled, precise slicing. Flats are forged to finish, preserving the character of the steel and reducing unnecessary material removal.
The extended 13” profile allows for smooth, uninterrupted draw cuts, making it ideal for slicing proteins, portioning, and presentation work.
The handle is constructed from black Micarta and compression koa, stabilized by KMG. This combination offers durability, grip security, and a natural visual contrast between modern and organic materials.
